Summer Salad Jars

A simple + fun idea for serving up your summer salad in a jar, with layers of ingredients and the dressing all-in-one. Shake the jar and you’ve got a delicious lunch, a perfect portable meal on-the-go, for a picnic or taking to eat at your desk at the office.

If you know me by now, you know I have a thing for jars. When I was little, I loved playing in my grandmother’s pantry because she kept nothing in it’s original packaging but instead transferred everything to be stored into various sized glass jars. So, when I discovered salad jars, it pretty much changed the salad game for me.

As a mom of three, I am always looking for ways to make meal times simpler. This salad jar recipe allows me to grab a quick lunch while still being able to get all my greens in. The ingredients store so well in a classic glass jar, and their portability allows you to simply open your fridge, grab it, and go. And the best part is that everyone can add layers of the toppings they love the most so everyone gets what they want.

What I love about this concept, is that you can add just about anything you have lying around in your pantry/fridge. I always try to include a seasonal fruit or vegetable, nuts/seeds, and a protein such as black beans or grilled chicken. Another idea would be to include a hearty grain such as quinoa or farrow. For this particular jar, I used arugula as my greens and added in hard-boiled eggs, bacon, blueberries, mozzarella and sunflower seeds. I also love to top mine off with my classic salad dressing.
