Cast Iron Roasted Brussel Sprouts

A super simple side dish recipe for roasted Brussel Sprouts cooked right in your cast iron skillet and perfect for your family supper. A vegetable meal that even the kids will love.

Cast Iron Roasted Brussel Sprouts

I am a huge fan of roasted vegetables, and at the top of that list are Brussel Sprouts. I bet I cook them 2-3 times per week. If you havenโ€™t yet figured out your go-to recipe for these tiny cabbages, this cast iron version is the answer. I absolutely love this recipe – it’s both quick and delicious, and (amazingly) is something the whole family enjoys.

Cast Iron Roasted Brussel Sprouts

Description

These brussel sprouts are so easy to make and taste delicious.

Ingredients

  • 1 pint brussel sprouts
  • Olive oil
  • Kosher salt

Instructions

  1. Trim bottom of brussels sprouts, and slice each in half top to bottom. Heat oil in cast-iron pan over medium-high heat until it shimmers; put sprouts cut side down in one layer in ย pan. Sprinkle with salt.
  2. Cook, undisturbed, until sprouts begin to brown on bottom, and transfer to oven. Roast, shaking pan every 5 minutes, until sprouts are quite brown and tender, about 10 to 20 minutes.

I used this new cast iron stir fry pan from my friends over at Lodge Cast Iron, that makes this recipe all the more quick + easy. It goes a little deeper than a typical cast iron pan making it so easy to stir fry my veggies without so much mess + splatter.

After I roasted these, I wanted to try a new + updated way to serve them up for dinner. I had a little homemade mayo left over and I mixed a small amount with some grated parmesan-reggiano cheese, like a simple aioli sauce. It was so different, but in the best way possible. Creamy with a bit of tang and just the right amount of dressing or sauce – Iโ€™m pretty sure we licked the bowl clean.
