Classic Caramel Cake

Caramel Cake and Caramel Frosting are a Southern classics. With layers of sweet and salty flavors this one of my favorite dessert recipes of all the classic frosting and cakes.

Classic Caramel Cake

As you know by now, baking was one of the centers of my childhood. I feel so fortunate to attempt to re-make recipes my mom or Grandmother made with me when I was younger. Some were never repeated, but some, like Caramel Cake, became a household staple. For as long as I can remember I just loved caramel cake and many times Mom made them as cupcakes. I love the layers of flavor and the yummy caramel icing that goes with it.

No matter how many time I make this recipe, I always seem to need to check in with my mom to make sure I’m doing it just right. Luckily, FaceTime makes that pretty easy to do these days! The caramel icing can be a bit tricky and sometimes the weather can play a difference in making the caramel frosting set up right, but my mom always knows what to do to get it back on track.

Classic Caramel Cake.

Caramel Cake is a Southern classic. With layers of sweet and salty flavor this one of my favorite desserts.

Ingredients

Scale
For the Cake
  • 3/4  cup butter
  • 1 1/2 cups sugar
  • 1/2 cup brown sugar
  • 3 eggs
  • 2 cups flour
  • 1 cup milk
  • 1 teaspoons vanilla
  • 1 teaspoon salt
For the Icing
  • 2 cups sugar
  • 3/4 cup buttermilk
  • 1/2 cup Crisco
  • 1/4 cup evaporated milk
  • 1/2 cup butter

Instructions

For the Cake

1. Preheat oven to 350 degrees and grease 2 9 inch cake pans.

2. Cream butter until its fluffy and add in sugar, brown sugar and cream for about 5 minutes.

3. Add in the eggs one at a time and cream after each.

4. Add in the milk and flour a little bit at a time, alternating.

5. Add in vanilla and salt.

6. Pour even amounts into each pan and bake for about 25 minutes.

7. Remove cake and cool on cooling rack for about 10 minutes.

For the Icing

1. Heat all ingredients in a saucepan over medium heat for about 15 minutes. Stir occasionally to ensure it does not burn.

2. The icing should reach about 240 degrees on a candy thermometer.

3. Once at this temperature, remove from heat and stir consistently until desired thickness is reached.
