Mint Simple Syrup

The smell of fresh mint is unmatched, in my opinion. I love making this easy mint simple syrup to have on hand in my home for my favorite cocktails or lemonade.

When we got married the Farmhouse at Serenbe had a garden just filled to the brim with fresh mint, surrounding the entire restaurant. When we built our house a few years ago and we were planning the garden I knew I wanted my own garden to have the same mass quantity of mint.

I love a good herb garden but bringing the mint into our landscaping made such a beautiful, fragrant and easy-to-grow ground cover. The mint spreads quickly and comes back bigger and better each year. It nearly grows itself, which is my preference when choosing things to grow, so make sure you’re planting it somewhere that you will surely want it to take over because it will.

With an overabundance of mint these days I am always trying to think of new things to do with the special herb so today I’m sharing an easy idea for making Mint Simple Syrup.

Not only is the mixture gorgeous and tasty, it’s really versatile and can be used in so many cocktail drinks, desserts or even for coffee. And, makes a really nice homemade gift for a friend or neighbor too.

Mint Simple Syrup

This versatile syrup is the perfect way to utilize mint.


  • 1 cup sugar
  • 1 cup water
  • 1 cup mint


  1. First, chop your mint coarsely. Bring sugar, water and chopped mint to a boil in a saucepan. Simmer for two minutes and then pour into a clear jar through a mesh sieve. Be sure to push on the mint leaves and any solids in order to wring out all liquid.
  2. You could really substitute any herb you might have growing in abundance, like rosemary or lavender. You can also make and keep a few small jars on hand in your refrigerator when your herb garden is at its peak. It’s a great way to preserve the flavor and also fills your house with the most wonderful aroma.
