Mint Simple Syrup

This versatile syrup is the perfect way to utilize mint.

Ingredients

  • 1 cup sugar
  • 1 cup water
  • 1 cup mint

Instructions

  1. First, chop your mint coarsely. Bring sugar, water and chopped mint to a boil in a saucepan. Simmer for two minutes and then pour into a clear jar through a mesh sieve. Be sure to push on the mint leaves and any solids in order to wring out all liquid.
  2. You could really substitute any herb you might have growing in abundance, like rosemary or lavender. You can also make and keep a few small jars on hand in your refrigerator when your herb garden is at its peak. It’s a great way to preserve the flavor and also fills your house with the most wonderful aroma.
