Chocolate Covered Peppermint Popcorn
You know I’m all about effortless entertaining and one of my favorite things about the holidays is finding new + easy desserts to whip up at a moments notice. You must also know that if I was trapped on a deserted island I might consider my only food to be popcorn, I love it!
With all the hustle and bustle, sometimes we just don’t have time to bake + decorate a full batch of cookies during the holiday season, and that is ok. Today I want to show you a quick and easy recipe that everyone is sure to love, making a beautiful food gift too.
This recipe is the perfect snack to bring to the kids’ schools for holiday classroom parties, and perfect for filling up bags for teachers, neighbors + friends.

Ingredients
- 2 large bags of popcorn (large pre-popped bag is fine)
- white chocolate almond bark
- chocolate almond bark
- peppermint sticks
Instructions
- Start by laying the popped popcorn evenly across a baking sheet. Remove any kernels, as they can get hidden under the chocolate. Next start melting your chocolate bark in a sauce pan, or in the microwave. When using the microwave I like to heat it in 30 second intervals, stirring in between, to make sure the chocolate is melting smoothly and evenly. Once the chocolate is melted use a spoon to drizzle atop popcorn. As you do each layer, let them dry to avoid gooey clumps.
- When they chocolate layers have dried, it is time to sprinkle on the peppermint. Other good toppings include sea salt, nuts and caramel sauce.
This popcorn is sure to be a hit at any holiday party you have coming up this season. It also makes a great food gift for coworkers and teachers when wrapped in cellophane and tied with a festive ribbon. If you want, you can even add more to it like red + green M&M’s, pecans or peanuts, pretzels and more.
