Description

A meal that reminds me of the my roots and inspires my work still today; Waffles and IceMilk is a must-share recipe and story.


Ingredients

Scale
  • 2 c. all-purpose flour
  • 2 tbsp. granulated sugar
  • 2 tsp. baking powder
  • 1/4 tsp. Salt
  • 2/3 c. unsalted butter, melted
  • 1 3/4 c. Milk
  • 2 large eggs
  • 1 tsp. Vanilla Extract

Instructions

  1. Start by preheating the waffle griddle.
  2. In a large bowl, whisk together all dry ingredients (flour, sugar, baking powder, salt)
  3. In a small bowl, whisk together wet ingredients (eggs, milk, butter, and vanilla extract)
  4. Next, mix wet ingredients into your large bowl with the dry ingredients. Whisk until well combined, aiming to get rid of any lumps of dry ingredients.
  5. On your hot waffle iron, pour waffle mixture and let cook until golden. Repeat this process until waffle mixture is gone.
  6. To make these IceMilk waffles, serve with a scoop of ‘IceMilk,’ aka frozen vanilla yogurt, as well as your favorite toppings. I recommend using fresh peaches and blueberries, or really any fruit that is in season!
